Apple Noodle Asian Salad
This recipe uses a delicious but simple homemade dressing which is poured over apple noodles made in a spiralizer . Quick to throw together & perfect for any weekday meal!
Chef Tip: Can chop apples instead of making noodles if no spiralizer available
Variety Tip: *your favourite sweet local apple will work well in this recipe
Ingredients
| 2 | Ontario apples* | |
| Dressing | ||
| Juice of 1 Lime | ||
| 1 tbsp | Sesame Oil | |
| 2 tbsp | Fish sauce | |
| 1 tsp | finely chopped Ginger | |
| 1 tsp | finely chopped Garlic | |
| 1/2 tsp | finely chopped Chilli | |
| 1/2 tsp | finely chopped Coriander stems | |
| 1 cup | julienned Red Pepper | |
| 1/2 cup | Coriander leaves | |
| 1/2 cup | Basil leaves | |
| 1/4 cup | sliced Onion | |
| 1/4 cup | sliced Spring Onion | |
| 1 cup | cooked Salad Shrimp | |
| 2 tbsp | roasted Peanuts | |
| Sprinkle of black Sesame seeds | ||
Directions
- Prepare the dressing by whipping all the dressing ingredients together
- Using a spiralizer, turn two apples into noodles and quickly add the dressing to coat the apple noodles to prevent browning
- Toss in all the other ingredients and serve fresh
