Ontario Apples and Almond Butter Whole Wheat Cookies
Alleviate stress and improve mood and concentration with these moist and decadent cookies. Ontario apples and rich dark chocolate nestled in a scrumptious whole wheat and almond butter batter to create a cookie that is as delicious as it is brain healthy. You won't believe these cookies are good for you, but more importantly, neither will the kids.
Makes about 4 dozen.
Variety Tip: For best results, use Ontario Empire or Gala apples.
Ingredients
3/4 cup | butter | 175 mL |
1 1/4 cup | pure creamed honey | 300 mL |
2 | eggs | 2 |
1 1/2 cup | almond butter | 375 mL |
1 tsp | pure vanilla extract (optional) | 5 mL |
1 | large sweet firm Ontario apple, cored, peeled and cut into small cubes | 1 |
3 cups | whole wheat or spelt flour | 750 mL |
1/4 cup | ground flax | 50 mL |
1 tsp | baking soda | 5 mL |
1/2 tsp | salt | 2 mL |
1 cup | dark chocolate, chopped into small bits (minimum 70% cocoa)(can use 100 g bar) | 250 mL |
Directions
Before you begin: Preheat oven to 350°F (180°C).
Line baking sheet with parchment paper.
In a large mixing bowl, with an electric hand mixer, beat butter, honey, eggs, almond butter and vanilla (optional). Stir in cubed apple.
In a separate bowl, add flour, flax, baking soda, salt and chocolate, mix using a fork.
Fold dry ingredients into bowl with wet ingredients until combined. Scoop a rounded tablespoon of batter onto a baking sheet lined with parchment paper (a finger space apart). Bake for approximately 10 to 12 minutes or until edges are golden brown.
